Peanut Butter Whoopie Pies from Martha Stewart

• 1 3/4 cups all-purpose flour
• 3/4 cup unsweetened cocoa powder (not Dutch process)
• 1 1/2 teaspoons baking soda
• 1/2 teaspoon fine salt
• 4 tablespoons unsalted butter, softened
• 1/4 cup vegetable shortening
• 1/2 cup granulated sugar
• 1/2 cup packed dark-brown sugar
• 1 large egg
• 1 cup whole milk
• 1 teaspoon pure vanilla extract
• Peanut Butter Buttercream (recipe below)
• 2 ounces bittersweet chocolate, finely chopped

Peanut Butter Buttercream

• 2/3 cup natural, creamy peanut butter
• 8 tablespoons (1 stick) unsalted butter, softened
• 3/4 cup confectioners? sugar
• Fine salt (optional)

Cream peanut butter and butter in the bowl of an electric mixer fitted with the paddle attachment on high speed. On low speed, mix in sugar until combined, then beat mixture on high speed until fluffy and smooth, about 3 minutes. Add salt to taste, if desired. Use immediately.

Preheat oven to 375 degrees. Line two large baking sheets with parchment paper; set aside. Sift together flour, cocoa, baking soda, and salt into a small bowl; set aside.

Add butter, shortening, and sugars to the bowl of an electric mixer fitted with the paddle attachment; cream on high speed until smooth, about 3 minutes. Add egg; beat until pale and fluffy, about 2 minutes. Add half the flour mixture, then the milk and vanilla; beat until combined. Add the remaining flour mixture. Beat together, scraping down sides of bowl with a rubber spatula as needed.

Drop 12 slightly rounded tablespoons of batter 2 inches apart on each baking sheet. Bake the cookies in the upper and lower thirds of oven, 10 minutes; switch the positions of the baking sheets, and rotate each one. Continue baking until the cookies spring back to the touch, 2 to 4 minutes more.

Remove from oven; let cookies cool on baking sheets, 10 minutes.Transfer with a metal spatula to a wire rack; let cool completely. Meanwhile, line a cooled baking sheet with a new piece of parchment; repeat process with remaining batter.

Spread 1 scant tablespoon buttercream on flat sides of half the cookies. Top each with one of the remaining cookies, flat side down, and gently press together. Transfer pies to a tray.

Cookies can be refrigerated in single layers (they?re sticky!) for up to three days. Bring to room temperature before serving.

A low calorie and delicious cod dish

I first tried this tasty Indian street food dish in my tandoori oven. I have to say it took some practice. The fish kept falling off the skewers before the outside got crispy and nice.

After a few goes and learning to put the skewers at just the right angle, I finally got it right.

This version is much easier. I cook the cod in the oven. No need for skewers! I use my own CURRY GUY smoked spices to give the fish that smoky flavour but you could also use another brand or make your own tandoori masala.

I recommend trying my smoked curry spices. They make great Christmas presents too.

• 4 x 200g Thick cut cod
• 250ml plain flour
• 2 tablespoon CURRY GUY smoked tandoori masala
• 1 tablespoon CURRY GUY smoked cumin
• 1 beaten egg
• 1 cup bread crumbs
• Salt and pepper to taste or my CURRY GUY spicy salt
• 8 lime wedges.

1. Preheat your oven to 150c
2. Mix the flour with the tandoori masala and cumin.
3. Dip each piece of cod into the beaten egg and then dust with the flour mixture.
4. Set the fish pieces onto a baking tray and then press the bread crumbs equally over the top of the fish.
5. Place the fish in the oven and allow to cook until the bread crumbs are toasted brown and the fish is just cooked through. About 30 minutes.
6. Season with the spices salt and serve with the lime wedges.

My father and grandfathers, who are and were all hunters, are affected by hearing loss. Hunting and Hearing?

When I first went hunting with my father, he fitted me with a gun and the right visibility clothing, and then he showed me how to insert earplugs to protect my hearing. At first I thought they felt weird, and a lot of my other teenage friends never wore hearing protection. Being at an age where everything was a fashion contest, I argued with him that the shots weren?t that loud and I never experienced any pain in my ears. My father told me that he wished my grandfather would have known more about hearing protection and taught him to wear the proper protection while hunting. Because of hunting and a few other reasons my father, now in his late 70?s has been affected by hearing loss for years. He now wears a hearing aid to help amplify hearing levels and is grateful that the damage was not worse. Since then I have always been conscious about my hearing protection while hunting.

Guns are Loud!?

According to the Center for Disease Control, the sound of a firearm can exceed 140 dB, making it an occupational hazard. When you consider the fact that a normal conversation is 60dB, and each increase of ten dB means the sound is twice as loud, you begin to realize how damaging firearm sounds can be! A gunshot is 256 times louder than a normal conversation, and can be very damaging over time. A study found that the older the hunter, the more likely he or she was to have experienced hearing loss.

Loud noises damage the ear by causing the loss of inner and outer hair cells deep within the ear. Noise damage can also cause the swelling of small parts in the ear and damage the nerve cells that transmit sounds to the brain. This type of damage lead to the feeling of pressure in the ear, ringing in the ear, difficulty hearing high-pitched sounds or background noise, and hearing loss.

Protecting Your Ears?

While the foam earplugs served me well in the 1970s, today?s technology has made strides in ear protection. A lot of hunters say that they don?t wear hearing protection because they don?t want to miss the sounds of the experience or a comment from someone in their hunting party. They don?t need to worry with electronic earmuffs. According to the Sight & Hearing Association, these high-tech muffs only block sounds that are above 110 decibels, so hunters can still hear the leaves crackle beneath their feet. If these aren?t an option, then the classic earmuff-style protectors do just fine. Those who wear hearing aids should ask a doctor whether to leave them in or take them out when using protection. The CDC also recommends that anyone who has constant exposure to high noise (like someone who goes to the shooting range two hours a day) should wear double protection ? earplugs and earmuffs.

When my children have grown old enough to hunt I will make sure to teach them the proper rules to ensure not only hearing protection but overall safety. I am excited to not only pass on a great sport, but also great advice that will protect them as they get older. -- ###

Buzzard oilfield yet to restart; more Forties delays seen

LONDON (Reuters) - The restart of Britain's largest oilfield after a maintenance shutdown has slipped further, trade sources said on Thursday, in what may further impact shipments of the oil that sets the Brent benchmark.

The Buzzard field in the North Sea, the largest of the fields contributing to the Forties crude blend which underpins the Brent contract, is expected to restart in the next couple of days, the source said, not October 25 or 26 as previously thought.

A series of delays in the restart of the field has disrupted shipments of Forties crude, leading to an increase in the premium in the price of Brent oil for immediate delivery, and frustrating buyers and sellers of the crude.

"Not yet," the source said, asked if the field had restarted. "Next couple of days." A second source, familiar with Forties production, said the restart was expected by Monday.

The timescales from the trade sources differ from an official statement from Canadian oil company Nexen, Buzzard's operator, in its third-quarter earnings statement on Thursday.

"We are in the process of restarting the platform, and expect production to ramp up in the next week to 10 days," Calgary-based Nexen said.

Buzzard has been shut since September 4 and prolonged work at the field has contributed to delays in all 16 of the Forties cargoes due to be loaded in October. So far, one November shipment has been cancelled and two delayed.

One Forties trader was expecting details of further cargo delays to emerge in the next few days.

A loss of Buzzard output for just a few days can have a significant impact on Forties loadings since the field pumps 200,000 barrels per day (bpd), enough to fill a Forties cargo every three days.

Restarting North Sea installations often takes longer than expected due to problems including bad weather and the emergence of unexpected engineering and technical issues.
